Mixed Client Mail Server and Central POP3
The only way really to do this would be to manage the POP3 accounts on the customers inhouse mail server as that is where all mail would go. The only other option would be to run all mail as POP3 to the hosted servers then have a POP3 downloader installed on the customers mail server to collect only the mail boxes that are required.
Having multiple MX records is only useful as failover (so if the in-house server fails the hosted POP3 account still collects mail) but it wouldn't pick up any bounces.

Miixed Client Mail Server and Central POP3
Consider the scenario below, - is it possible, and how would it be set-up?
The client wants their own mail server, so they control mail inhouse. However, they have one or more remote workers who they would prefer to have centrally hosted POP3 accounts.
If there's an MX record with priority 10 pointing to their inhouse mail server, and another with priority 20 for the centrally hosted POP3 mail, can those PO3 accounts receive email?
If the inhouse server is set-up to not have the central POP3 users, then will the bounce from that server go to the central one?
Any views? I have a number of clients in this position.
